The Diet During Treatment

What you will actually eat for a fortnight, and why it is not a punishment.

The Diet During Treatment

The prescribed diet is the part guests worry about beforehand and stop noticing by the fourth day. It is warm, soft, lightly spiced and largely vegetarian, and it is cooked to the physician's instruction rather than to a menu.

Kanji - rice cooked long in its own water - appears often, particularly early. It is more interesting than it sounds and considerably more interesting than it looks.

Coffee goes. So does anything cold, anything raw, and, for most guests, anything they had considered non-negotiable. Withdrawal is real for about two days.

What surprises people is the appetite that returns in the second week, and how specific it becomes. Several guests each season ask for the kanji recipe on the way to the airport.
